Last night was a nice summer-like evening in Halifax so that meant one thing. Backyard dinner! The music was playing, the beer was flowing and I whipped up a dinner that will sure to make the list of must haves on Kline Street. After that we headed downtown to check out Knocked Up and then came home and called it an evening.

The dinner - Grilled black bean quesadillas with spinach, sweet potato and chicken
I read about this recipe a few weeks ago on Slashfood (one of my new favourite sites) and after showing Katie I knew it was something I would have to try. Well it was a total success and despite the huge mess in the kitchen afterwards it was not that hard to make. First I cooked up some chicken, ideally this meal is perfect for left over chicken but I mean what is the big deal to cook some up right. As that was cooking I began working on the other fillers. I chopped up some garlic and diced some onions and toss that into a warm frying pan with some olive oil and a few spices. I used salt, pepper and chipotle seasoning. After a few minutes of cooking I drained a can of black beans of the juice and tossed the beans in the pan letting it cook up until it got nice and thick.

Setting that aside in a bowl I next got the potatos going. I peeled and chopped up two sweet potatos and put them in the steamer. I have never steamed potatoes for mashing before but the article said it makes them taste better and most paste like which is perfect for quesadillas. They steamed til they were good and ready for mashin and I mashed the potatoes up and set them aside.
The chicken was now done, so I broke it up into pieces and set that aside. I was grating some cheese at this point as well, the glue that holds together any good quesadilla for sure.
With everything coming together I just had to get the spinach ready and it was time for building. In a sauce pan I heated up some more olive oil and once that was nice and warm I added a large handful of spinach. I stirred that up until it was borderline cooked and turned off the heat. It was now time to build the cuz-adillas.

Heating the large frypan I tossed four large flour tortillas in the oven for one minute at 350 degrees just to get them nice and soft. Once out I layed one tortilla on a plate and added
cheese, bean mixture, potatos, spinach, chicken, more cheese and a second tortilla onto it.
I smushed it all down a little and then went over and slid it onto the frying pan. I kept mine on for about a minute and then very carefully flipped it over and did the other side. You just want to leave it on there long enough to brown the tortillas.

Once done put it on a plate and leave it for a minute or so to let the cheese melt and make it stick together. Once this is done chop it into four pieces and serve. We had sour cream with ours but next time we have to remember some hot sauce.
Katie and I both thought they tasted awesome. I am sure you will enjoy them as well.

Knocked Up
After cleaning up and digesting a very good meal, we got ready and headed downtown. Katie drove since it has been awhile since she has been behind the wheel and she seemed pretty excited based on how fast we got there.
We headed over to Park Lane, got the snacks and got our seats. It was as busy as I have ever seen that theatre with a lot of people milling about trying to find seats. Finally the movie started and the laughing began. The film was pretty much what I expected it to be, a lot of laughs and a story I did not mind. I liked all the characters and even bought into that actually happening. Some of the highlights were Ryan Seacrest and the whole trip to Vegas thing.
It is by no means an Oscar flick but it doesn’t try to be. It is what it is, a well done comedy that has some laughs mixed in with some nice moments. The Canadian content did not hurt either. I won’t say much more because I hate giving stuff away but it is a good bet you will find something to like about this movie. If not you can always rent Munich.
