Last night we had some friends over for dinner and two things stood out for me among all the fun. One we have found a new summer drink derived from a drink we already loved and second, I need to revisit my burger making notes.
The mojito has always been a favourite for Katie and me every since we had them way back in the beginning when we went to Ottawa. Well yesterday thanks to a recipe I saw in the Jane magazine kicking around the house we have a tasty summer drink that went over very well last night. It was basically a mojito but with strawberries muddled in as well. It added flavour, bits of strawberry to eat and of course the festive pink colouring (see picture).
Second the burgers I made were supposed to be molten mini cheesburgers. Tiny bite sized burgers with a piece of cheese stuffed in the middle before cooking with lots of bbq sauce added. Everything went fine, added in all the usual ingredients and they looked good even before grilling. When it came time to throw them on the bbq something odd and annoying was happening. They were not sticking together and it was killing me seeing all that lovely meat fall through the grill.
I ended up frying them inside and they did taste good in the end but I was more concerned that I had failed as a burger maker. What did I do wrong?? Anyways everyone left with a full belly and thanks to some potatoes and salad I am sure the burger incident was covered up.

It was a fun evening of food and wine (after mojtos) and the weather turned out great. Vacation time is rolling along just fine on Kline.
The clean up did not take too long thanks to a dishwasher and before not to long we were resting on the couch feeling full and tired.
Check out Katie’s hair cut in the picture, she is all ready to look amazing at the wedding this week I would have to say. I know it is a little early in the day but one of those mojitos seems very tempting right now. Have a good day everyone.

1Bigger tip:
Make your burgers ahead of time and then wrap them individually in cellophane and store in the fridge for an hour or more before slapping them on the grill. This may help the break-apart phenomenon. The other trick that I use is a raw egg mixed with the ground beef (pre-patty forming) which I find helps it all stick together.
