Last night I whipped up some burritos and thought I would share the process with you.

I based it on a recipe I found for sweet potato burritos but I changed it up a bit.

Ingredients

  • 2 sweet potatos, mashed
  • Left over ground beef, cooked
  • 12 10 inch tortillas
  • 1 can of kidney beans
  • 4 cloves of garlic
  • 2 tablespoons of olive oil
  • 1/2 of an onion chopped
  • grated cheddar cheese
  • chili pepper, cayenne pepper, salt and pepper
  • 2 cups of water

1. Preheat oven to 375 degrees.

2. Boil water and toss in chopped up potatoes for the mashing. Once they are cooked put in a bowl and mash them and leave off to the side.

3. In a large pan or skillet, heat up the olive oil and toss in the chopped up onions and crushed garlic. Let this heat up until everything is soft and smelling good.

4. Drain the beans and put them in the pan along with the mashed potatoes and the ground beef. Add the water and heat it to a boil. Now depending on how running or thick you like the mix, let it stay on medium heat for 10 minutes or so stirring it. You may even want to take the masher and mash it all up in the pan.

5. Once the mix is getting thick enough add in the spices and stir once again.

6. Once you are ready to make the burritos, heat up the tortillas for 1 minute in the microwave making sure to cover them with wrap on a paper towel. This will make them easier to fold.

7. Start adding the mix and the cheese into each tortilla, folding them up and letting them sit on a baking tray for a few minutes.

8. Once they are all done, put them in the oven for 10 minutes.

9. Take them out and eat!
