Yesterday for brunch I whipped up a dish that is super easy to do but the end product gives the appearance of you knowing your way around the kitchen. If you ever have to go to a brunch at a friend’s place and want to show off I suggest making a broccoli and ham quiche.

Ingredients

  • 4 eggs
  • 1 cup of grated parmesan cheese
  • 1 cup of sliced up ham
  • 1 cup of frozen broccoli, thawed, drained and sliced
  • 1/2 cup of pancake mix
  • 1/2 cup of grated cheddar cheese
  • 2 cups of milk
  • 1/4 cup of soft butter
  1. Preheat oven to 375 degrees and grease a pan. I used one of those aluminum pie plates you can get at the grocery store..
  2. In a large bowl beat together the milk, eggs, pancake mix, butter and parmesan cheese. The batter will be lumpy at this point and then add in the broccoli, ham and cheddar cheese. Once it is all stirred up, pour it into the pan.
  3. Bake in oven for 50 minutes and then take out of oven and let it sit for a few minutes. Bam.

After a meal like that it took some time to feel energized again so after some digesting we went for a short walk with the dog. It was a nice afternoon so it was good to get some fresh air.

We came home and watched the season premiere of CSI and then I was off to work. Pretty busy night but it went by fast.

SNL started another season last night with LeBron James as the host. There were a few funny clips I will post once they are up on Youtube.
