I don’t know about where you are from but it got very, very cold in Halifax today.

Good thing we spent most of the day inside relaxing and taking it easy.

For dinner I cooked up meatloaf and as always I took some pictures to share.

I used a recipe from videojug but as always I kind of went away from the instructions and did my own thing. In the end it turned out very well and tasted great. There is a plate of leftovers for tomorrow and probably the next day! Sweet.

Recipe

  • one package of ground beef
  • one package of ground pork
  • one green pepper chopped
  • one large onion chopped
  • bread crumbs
  • two eggs beaten
  • ketchup
  • bbq sauce
  • cayenne pepper
  • salt
  • pepper
  • cream
  • cooking oil
  • four cloves of garlic pressed

First I heated up fry pan with some oil and cooked up the onion, greep pepper and garlic. I heated it until everything was soft and smelling great.

I put the mix in a bowl to cool and moved on to the rest of the dinner.

Next I put the meat, eggs, bread crumbs, ketchup, bbq sauce, salt, pepper and cream into a large bowl and mixed it all up with my hands. Once it was nice and mixed up I then put in the onions, pepper and garlic mix and mixed that up.

I then started to put the mix into a baking dish, pressing it in night and tight. Once that was done I did my best to shape it into a loaf. It seemed to do the trick although I would prefer a slimmer tray. Just for fun I added some more ketchup on top and it was ready to cook.

I put it in a the preheated over (35o degrees) and cooked it for 75 minutes. Once out it is best to let it sit for 15 minutes or so before cutting it.

To go with this I made some mashed potatoes and steamed some broccoli.

After digesting for an hour or so we watched the finale of the Amazing Race with some blueberry pie and ice cream. The team that we both wanted to win, won the prize so it worked out.

Trying to stay warm we watched the Giants pull off another upset and set up a Super Bowl date with the unbeaten Patriots.

Should of known it would happen. Eddie Murphy predicted it many, many, many years ago. Check out this scene from Coming to America.
