The weekend is here again and time is flying in February so far. Hope everyone is fighing the winter blahs and ready for a great weekend ahead.

To celebrate another wonderful Friday night I decided to find a recipe to make last night. Katie is always pretty drained after a long week of work and even more so when it is in Saint John.

The recipe of choice was for a dish I found in a very unexpected place.

It was for a taco potatoe pie, I will get to the recipe in a second but just wanted to tell you where I got it.

Last weekend on Super Bowl Sunday as I was flipping channels I stopped on our local Eastlink channel and there was a cooking show on. You may know it, it is called Welcome to My Kitchen.

Anyways I have seen it before and it always has some very easy and good looking recipes to try. The host was doing the taco pie and it looked great. I mentaly stored it away for a later date and yesterday was the day I decided to try it out.

Here is the recipe.

TACO POTATO PIE

2 c. cold mashed potatoes, prepared with milk & butter
1 envelope taco seasoning mixed, divided
1 lb. ground beef
½ c. chopped onion
1 can (16 oz.) refried beans
½ c. barbecue sauce
¼ c. water
1 c. shredded lettuce
1 medium tomato, diced
1 c. grated cheddar cheese
Sour cream

Combine potatoes and 2 tbsp. taco seasoning. Press into greased 9” deep dish pie plate, set aside.
In skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in beans, bbq sauce, water and remaining taco seasoning. Cook & stir until hot and bubbly. Spoon into potato crust. Bake at 350 for 30 – 35 min. until potatoes are hot. Top with lettuce, tomato and cheese and pass the sour cream.

I stuck pretty close to this recipe and added in some green peppers into the mixture. It turned out very well. Here are the photos.

I don’t know if we were really hungry or if it was just that good but Katie and I had two helpings each and loved every bite. We will be making this easy dish again very soon. I hope you give it a try.

We were even saying it would be good as a dip with some taco chips. So many options with this one.

That cooking show has many solid recipes to try out so I think I will be going back to it again soon.
