Some of the best things in life happen by accident and this past weekend was another example. A friend showed up for a visit and really wanted a refreshing mojito since we have served them before and clearly they stuck in his mind. The problem, we were not really prepared and did not have all of the ingredients. Instead of making a trip to the store, we made due with what we had and in the end it turned out.

A mojito is traditionally made of five ingredients: white rum, sugar, lime, carbonated water and mint. The combination of sweetness and refreshing citrus and mint flavours are intended to mask the potent kick of the rum. We were missing what I thought was one of the biggest ingredients, the soda water, so it was time to try something new.

Here is the recipe for the drink we came up with and in the end it tasted a lot better than the traditional mojito. I am sure it has been done before but in our house it will now always be called a cuz-jito. Enjoy.

You will need the following for one drink:

  • A highball glass (or any glass really)
  • 2 teaspoons of sugar
  • 1 shot of white rum
  • 2 strawberries, chopped
  • 1 lime wedge
  • 10 mint leaves
  • tonic water
  • ice
  • a muddler

In the bottom of the glass put in the sugar, eight of the mint leaves and the chopped up strawberries. Take the muddler and gently mash everything down. The mint leaves should only be bruised to release the essential oils so don’t shred everything.

Then the shot of rum is added and the mixture is briefly stirred to dissolve sugar. Finally top off the drink with ice cubes and tonic water using mint leaves and lime wedges to garnish the glass.

Trust me your friends will love this refreshing drink and ask for more. The strawberries are a nice touch and add a fruity flavour that just screams backyard in the summertime.
